So my staker(see sig for stats) kinda fails agaisnt others my level due to the def.

What should I do with it then? Get 80/80/80?

To be honest I don't think you need 99 dung at all, 86 is easily sufficient.
I would maybe keep it at 52 defence, it's not a great level but I think it might sell more than one with 80 defence
No one seems to be interested in 80-80-80s these days.
