Well I felt like cooking tonight 
Just did two seared thick cut fillets of cod pan fried skin side down.
The mix that I put underneath the cod was landons of bacon and diced potato's along with finely sliced chives ontop of the cod with a sliced shirlot.
Mixed in a bit of water double cream and vegatable oil for the sauce
It was beautifull except most of the sauce evaporated so I'll have to work on that next time
