Filipino food: Steamed kangkong with Mango salsa

3/4 cup ripe mango, diced
1 cup tomatoes, seeded and diced
1/4 cup sugarcane vinegar
2 tsps sugar
1 1/4 tsps rock salt
1/8 tsp ground pepper
1 bunch kangkong, sliced and steamed

Procedure:
1. In a bowl gently mix mangoes and tomatoes.
2. In a seperate bowl combine vinegar, sugar, salt, and pepper. Pour over mango salsa while stirring lightly.
3. Arrange steamed kangkong on a plate.
4. Spoon mango salsa over kangkong and serve.

Note: Serve the salsa within an hour of preparation; otherwise the mango will absorb the vinegar and lose its sweetness.
